Loma Luna Posole Recipe

  Spanish Pork

3# Boneless pork, cut into chunks
6c water
5c canned hominey (1/2white:1/2 yellow)
1c chopped onion
1t garlic powder
2t leaf oregano
3 red chile pods, crushed or
3T chili powder
1 1/2-2t salt, or to tast

Place pork and waer in pot and cook, covered, until meat is tender, about 1 hour. Add remaining ingredients, tasting for salt.
Simmer over low heat for 20-25 minutes. Servings 8-10
This is really good if you can find real New Mexico chili powder.
