Mexican Salad | |
Ingredients:
1 pound lean ground beef or ground turkey1 tablespoon chili powder, or to taste 1/2 teaspoon ground cumin, or to taste Salt and pepper, to taste 1 can kidney beans, drained and rinsed 1 head lettuce, torn into small pieces 1 - 2 tomatoes, cut into bite-size pieces 1/2 cup sliced green onions 1/2 cup sliced black olives 1 or 2 avocados, sliced 1 cup grated Cheddar cheese 2 cups crushed corn chips 1 bottle Catalina dressing Alternative Dressing: 1 pint sour cream 2 avodacos, peeled and mashed (omit avocados from salad) 1/2 cup taco sauce Salt and pepper, to taste
Directions:
Saute ground beef, adding chili powder, cumin, salt and pepper. Add drained kidney beans to skillet. Heat through.Combine lettuce, tomatoes, onions and olives in large bowl. Top with hamburger mixture and avocados. Pour dressing over and toss. Top with cheese and chips, If using alternative dressing, combine ingredients just before serving. |
