GR-Grandma McTaggart's Potato Bread Recipe | |
Scottish Bread | |
Ingredients:
2 potatoes, cooked and mashed with a little potato water1 heaping T. butter 2 heaping T. sugar 1 heaping T. salt 3 c. warm water and 2 c. warm milk combined 3 yeast cakes dissolved in 1/2 c. warm water flour
Directions:
Put everything but flour into a mixing bowl, stir well. Begin adding flour, and continue until the consistency is like stiff cake dough. Let rise 1 1/2 hours. Add enough flour to hold shape. Knead 10 minutes. Grease hands and shape into loaves. Place loaves in greased tins. Let rise until doubled or higher. Bake 30 minutes in 350 degree oven. With some additions, this recipe males a Christmas fruit bread. Add 1/2 pound butter, 1 c. sugar, five egg yolks, 3 egg whites, and a few currants, raisins, citron, and nuts. After bread has risen, the second time, brush tops with 2 egg whites, beaten.An old Scottish recipe from the 1800's that Grandma McTaggart shared with the Wyandotte Indians when she moved to Michigan.
