Sandy's Gazpacho Recipe

  Spanish Soup

Ingredients:
2 english cucumbers (with peel!)
10 italian tomatoes (fresh!)
1 white sweet onion
1 red pepper
1 green pepper
4 stems cilantro chopped fine
tobasco or hot chili sauce
1 can Heinz tomato juice
1 fresh lemon
pepper, salt

Directions:
Use steel blade of cuisinart to chop up ingredients into bite size bits, squeeze in juice of one lemon, season to taste. add to a pot of Heinz tomato juice (cold). Let soup stand overnight, garnish with lemon slices and serve in chilled bowls. Add tobasco or chili sauce before chilling and before serving. Enjoy!
