Achiote Rice Recipe | |
Mexican Rice | |
Ingredients:
8 cups waterJuice of 1 lime 2 cups long-grain brown rice 2 tablespoons achiote paste 1/2 teaspoon salt 2 tablespoons olive oil
Directions:
Preheat the oven to 325°F. In a large saucepan, combine the water and lime juice and bring it to a boil.Add the rice and boil it for 10 minutes. Drain well. Transfer the rice to a baking dish. Add the achiote paste, salt, and olive oil and toss to combine. Cover the baking dish with foil and bake for 20 minutes. Makes 3 1/2 cups
By cooking achiote paste into the rice, it infuses it with a myriad of aromatic and earthy flavors and gives it an inviting deep red color. I am also sharing my secret to making fluffy, delicate rice with you. You can use this to cook any sort of rice to keep the grains from sticking. You can substitute smoked paprika for achiote paste for a rustic flavored variation on this recipe. For a low-fat version, simply omit the olive oil.
