Roast Beef with Julienned Vegetables and Horseradish Dip Recipe

Ingredients:
8-10 slices of roast beef (cold cuts)
1 carrot
2 celery stalks
1-2 inches (afew cm)fresh horseradish

marinade:
3 tbsp olive oil
2 tbsp mirin
1 tbsp Japanese soy sauce
1 tbsp white wine vinegar

Directions:
1. Julienne the celery and carrot (i.e., cut into thin strips). Shred the horseradish.

2. Roll up the roast beef, wrapped around the julienned vegetables.

3. Mix all the ingredients for the marinade in a bowl.

4. Place the roast beef rolls on a platter with some of the marinade and sprinkle the shredded horseradish on top. Guests can dip the rolls in the rest of the marinade.
4 Servings.
One sunny day in Sandhamn, we were recording a TV program and made these roast beef roll-ups. Buy presliced roast beef to make them in a jiffy!
