Kidney Bean Salad Recipe

  American Salad

2 cans kidney beans, drained
1/2 c. chopped celery
1/2 c. chopped onion
3-4 hard-cooked eggs
1/4 to 1/2 c. sweet pickle relish
salt & pepper, to taste

Chop eggs, celery and onion coarsely. Mix with other ingredients, adding just enough mayonnaise to moisten. Taste for seasoning. Chill, serve on lettuce leaves, if desired.
You can increase or decrease these amounts, depending on how many you wish to serve. This would serve 6-8 nicely.
