Coconut Cake Icing Recipe

Ingredients:
8 oz. butter
8 oz. White Crisco
4 cups confectioner's sugar (sifted)
1 egg white
1 tsp. pure vanilla extract
1 tsp. almond extract

Directions:
n large mixer bowl, at medium speed, beat butter and Crisco until well mixed, approximately 2 minutes. Reduce mixer speed to low and slowly add confectioner's sugar until well incorporated. Add 1 egg white (or if you prefer, meringue powder equivalent to 1 egg white) and turn mixer to high speed, beating until light and fluffy, approximately 4-5 minutes. Then add vanilla and almond extract and beat a few seconds to incorporate. This is a bakery-type frosting which works very well with a coconut cake. I make a coconut cake topped with this icing and then put coconut on the top and side of the cake.
