Chicken Saltimbocca Recipe

  Italian Chicken

Ingredients:
3 Boneless, Skinless, Chicken Breasts
1 Egg, beaten
Italian Seasoned Breadcrumbs
1/2 cup Vegetable Oil
12 Paper-thin slices Proscuitto Ham
6 Slices Mozzarella Cheese (or other kind, to taste)

Directions:
Trim Chicken of all Fat, cut each Breast into two halves, removing the tough cartilage at the center. Dip into Egg, then into bread crumbs. Heat oil in large skillet to medium high. Saute Chicken Breasts on both sides until browned and cooked approximately 3/4 through. Cool. Slice Crosswise, place two pieces Proscuitto and one piece cheese in each. Place on baking sheet. (Can be made ahead to this point.)

Bake in oven at 350 degrees for 25-30 minutes, until chicken is cooked through and cheese is melted.
