Simple Perch Recipe | |

Ingredients:
1 lb perch fillets3 eggs 2 cups crushed vegetable thin snack crackers 2 tbls butter or margarine
Directions:
Mix eggs together in bowl. Put crushed crackers ( should be the same consistency as bread crumbs ) in large feezer bag. Dip fillets in egg mixture then put in freezer bag with cracker crumbs a few at a time. Shake to coat. Heat margarine in skillet on medium heat carefull not to burn. Add perch fillets. Cook approx. 10 min turning once until done.You can substitute bread crumbs and your own favourite seasonings for the cracker crumbs but the vegetable thins crackers are already seasoned and a box will do a lot of fish. Not to mention how easy to prepare a shore lunch or for ice fishing.
