Zucchini Jelly Recipe

  Jellies and Jams

Ingredients:
6 cups shredded peeled zucchini (remove seeds if zucchini are large)
1 cup water
3 cups sugar
1 small can crushed pineapple, drained
2 tablespoons lemon juice
1 large box (6 oz.) red rasberry gelatin, or other flavor choice

Directions:
Combine zucchini and water and boil 20 to 30 minutes. Add sugar, drained pineapple and lemon juice.
Boil 6 minutes. Add gelatin. Cool and store in freezer.
