Banana Spice Cake Recipe


2-1/2 cups sifted cake flour
1-1/4 cups sugar
2-1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
2/3 cup Crisco(shortening)
2/3 cup mashed banana
1/3 cup molasses
3 eggs
1/2 cup milk

Fluffy Frosting:
1-1/2 cups sugar
1/8 tsp. cream of tartar
1/2 tsp. salt
2 egg whites
1 tsp. vanilla

In mixer bowl, combine flour, sugar, baking powder, soda, salt, spices, Crisco, banana, and molasses. Mix vigorously 2 minutes by hand or at medium speed of electric mixer. Add eggs and milk; beat 2 minutes more. Pour batter into 2 greased and floured 9x1-1/2-inch round layer pans. Bake at 350 degrees F. for 35-40 minutes. Cool. Frost with Fluffy Frosting.

In top of double boiler, combine sugar, salt, 1/3 cup water, and the egg whites. Place over boiling water and beat about 7 minutes with rotary beater or elcetric mixer until frosting holds stiff peaks. Mix in vanilla.
