Stuffed "Dooleys" Recipe

Ingredients:
4 large sweet potatoes
1/3 cup evaporated milk
2 Tablespoons butter
1/2 teaspoon cinnamon
2 Tablespoons orange juice
8 slices bacon(fried & crumbled)

Directions:
Bake potatoes 400 degrees F. for 35-45 minutes or until soft enough to scoop out insides. Cut potatoes in half lengthwise and remove pulp. Add milk, butter, cinnamon and orange juice to sweet potato pulp. Whip until creamy and fluffy. Return mixture to shells. Sprinkle bacon over potato mixture. Return to oven only long enough to heat thoroughly.

Serves 8.
