Broccoli-Peanut Salad Recipe

  Salad

Ingredients:
1 1/2 lbs. fresh broccoli
2 green onions, chopped
4 oz. jar diced piniento, drained
1/2 c. raisins
1/2 c. dry roasted peanuts
1/2 c. mayonnaise
2 tbsp honey

Directions:
Trim off large leaves of broccoli, and remove tough ends of lower stalks; wash thoroughly. Cut stalks into 1/4 inch slices. Cut remaining broccoli into flowerets; place in large bowl. Add green onions, pimiento, raisins and peanuts. Combine mayonnaise and honey in small bowl; spoon dressing mixture over top of broccoli mixture. Toss gently to coat. Cover and chill 2 hours.
6 servings.
