Rice Pudding Recipe

  Dessert

Ingredients:
1/2 cup raw white rice (not minute)
1/2 cup white sugar
1/4 tsp. salt
1 quart milk
1/2 tsp. almond extract,( may use vanilla)
dash of nutmeg
1/2 cup raisins (optional)
may use regular or white raisins
1 whole almond (optional)

Directions:
Sprinkle rice and sugar on the bottom of a 1 1/2 qt. baking dish. Cover with milk and sprinkle with nutmeg. Bake at 350 degrees for 1 1/2 hours stirring twice during baking. Remove from oven and let sit to cool. (this will thicken slightly upon cooling). Serve warm. (good cold too!)

Make 6 servings.
Note: At Christmas time in Norway, a single almond is added and the pudding is served in dessert cups. The person with the almond in their pudding receives an extra little present.
