Ingredients:
1 1/2 C. mashed boiled sweet potatoes1/2 C. honey 1 tsp. ground cinnamon 1/2 tsp. salt 3 large eggs 1/2 C. sugar 1 tsp. vanilla extract 1 C. pecan pieces or whole pecans (optional) 1 - 9 inch deep dish unbaked pie shell
Directions:
Preheat oven to 350 F. Mix sweet potatoes, honey, cinnamon, and salt together in a large mixing bowl. In a separate bowl, beat the eggs, then gradually beat in sugar and vanilla. Pour the eggs into the potato mixture and mix well. Add pecans, if desired, and pour into pie shell. Bake 1 hour or until a knife inserted into center comes out clean. | |
