Grilled Catfish Recipe

Ingredients:
Catfish fillets
Olive oil
Freshly squeezed lemon juice
Salt and freshly ground black pepper to taste

Directions:
Mix a bit of olive oil, lemon juice, salt and pepper together and whip to the consistency of a salad dressing. Marinate the fish in this mixture for 1/2 hour before grilling. Grill over charcoal for about 5 minutes on a side, or until the fish is lightly browned and begins to flake a bit. Do not overcook.
