Garam Masala Recipe

  Potpourri

Ingredients:
2 parts cumin
2 parts fennel
2 parts caraway
1 1/2 parts coriander
1 1/2 parts cardamom
1-2 parts cinnamon
pinch saffron
1-2 parts chiles

Directions:
Grind all ingredients in a food processor or mortar and pestle (I use a coffee grinder).

Notes:
1. All ingredients should be in seed/whole form for freshest taste.

2. For a super quick garam masala, mix 2 parts mild curry powder with 1 part cinnamon.

3. Garam masala, like all curries, is very individual and has hundreds of possible blends. Experiment to develop your own taste.
