Calamari Fra Diavolo Recipe | |

Ingredients:
2 lbs. squid*1 c. minced carrot 1/3 c. minced celery 2 tsp minced garlic 2 tbsp olive oil 1 1/2 c. tomato, peel, seed, chop 1/2 c. chopped fresh basil 3 tbsp tomato paste 1 tsp crumbled, dried oregano 1 tsp freshly ground pepper 1/4 tsp dried red pepper flakes salt freshly cooked pasta
Directions:
Clean and slice squid into 3/4 inch rings; set aside. Saute carrot, celery and garlic in oil in skillet over low heat until tender, about 20 min. Increase heat to med-lo. Add chopped tomato, fresh basil, tomato paste and seasonings; simmer until sauce is very thick, about 20 min. Reduce heat to low. Add squid and simmer until cooked through, stirring frequently, 10-12 min. Spoon over pasta and serve immediately. Serves 2.
*Shrimp may be substituted for squid - adjust final cooking time accordingly.
