Blueberry Buckle Recipe

  Jellies and Jams

Ingredients:
1/2 c. butter, room temp.
1/2 c. sugar
1 egg, beaten
1 c. flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 c. milk
2 c. fresh or frozen blueberries
1/4 c. butter, room temp.
1 c. sugar
1/2 c. flour
1/2 tsp cinnamon
Whipped cream

Directions:
Preheat oven to 375. Butter 9" sq. baking pan. Using elec. mixer, cream 1/2 c. butter with 1/2 c. sugar 3 minutes. Add egg and continue beating 1 min. Combine 1 c. flour, baking powder and salt. Add to butter mix in 4 batches, alternating with milk. Turn into prepared pan, spreading evenly. Top with berries.

Using elec. mixer, cream 1/4 c. butter with 1 c. sugar. Add 1/2 c. flour and cinnamon and blend until crumbly. Sprinkle over berries. Bake until golden brown and bubbly,about 45 min. Serve immediately with whipped cream.
Serves 6.
