Hungarian Goulash Recipe

  Hungarian Stew

Ingredients:
3 lbs boneless beef chuck
3 lbs. (7 cups) onions, cut in wedges
1 tbsp salt
1/2 tsp black pepper
Paprika
Parsley
Cooked noodles
Sour cream

Directions:
Cut meat into 1 inch cubes, discarding excess fat. Put meat, onions, salt, pepper and 2 tbsp paprika in large heavy kettle. (NO water is needed.) Cook over medium heat for about 20 minutes, stirring often. Simmer, covered, for 2 hours, stirring occasionally. Uncover and simmer until liquid cooks down to gravy consistency. Garnish with parsley and serve with noodles and a generous dollop of sour cream topped with a sprinkling of paprika.
6-8 servings.
