Shrimp-Cream Cheese Gazpacho Recipe

  Spanish Soup

Ingredients:
5 c. water
1 1/2 lbs. unpeeled, small fresh shrimp
2 qts. tomato juice
1 bunch green onions, chopped
2 cucumbers, peeled, seeded & chopped
4 tomatoes, peeled, seeded & chopped
1 avocado, peeled and chopped
8 oz cream cheese, cut in 1/2" cubes
1/4 c. lemon juice or white wine vinegar
2 tbsp sugar
1/2 tsp hot sauce
Garnishes: cucumber slices, sour cream, whole shrimp

Directions:
Bring water to boil; add shrimp and cook 3 min. after water returns to boil. Drain well; rinse with cold water; cool.

Peel & devein shrimp (Set aside about 10 shrimp for garnishing, if desired)

Combine shrimp & next 9 ingredients in large bowl; cover.

Refrigerate at least 3 hours. Garnish, if desired. 13 cups. (I haven't tried this but it sounds great.)
