Tomato Slices w/Feta & Chopped Herbs Recipe

  Greek Vegetable

Ingredients:
Fresh Tomatoes
Crumbled Feta Cheese
Chives
Parsley
Sweet Basil
Salt & Ground Pepper

****Strong Vinaigrette****
1 tsp. salt
1 heaping tsp. green-peppercorn mustard
1/2 tsp. black pepper
2 tbsp. balsamic vinegar
3 tbsp. vegetable oil
2 to 3 tbsp. olive oil

Whisk all ingredients together.

Directions:
Cut tomatoes in half crosswise and remove seeds. Place on a platter and top with crumbled feta cheese. Sprinkle with minced chives and parsley, basil strips, salt and ground black pepper. Spoon "Strong Vinaigrette" over all and serve.
