Chicken Marsala Recipe

  Italian Chicken

Ingredients:
5 boneless chicken breasts
1/4 cup flour
1/2 tsp. salt
1/4 tsp. pepper
2T. veg. oil
2 c. sliced mushrooms
1 clove garlic, minced
1 (141/2 oz.) can whole tomatoes drained & chopped or the Italian ones already seasoned are good too.
1 (8 oz.) can tomato sauce
1/3 c. Marsala wine
1/2 tsp. dried basil
1 lb. uncooked linguine cooked and drained.

Directions:
In large plastic food bag, combine chicken, flour, salt & pepper. Shake to coat chicken thoroughly. In large skillet, brown chicken in oil 5 minutes on each; remove and set aside. In same skillet cook and stir mushrooms and garlic 2-3 minutes. Stir in tomatoes, tomato sauce , wine & basil; simmer 1 -2 minutes. Return chicken to pan; mix with sauce. Cover; simmer 5 minutes, turning chicken once during cooking; Serve over linguine.
