simple carrot cake and cream cheese frosting Recipe

  American Cakes

Ingredients:
cake recipe
2 cups of s/r flour
1 cup of oil (any vegetable)
3 cups of grated carrots
2 eggs large
1 cup of sugar
1 tsp baking powder

frosting

200 grammes of full fat cream cheese (do not use low fat)
200 grammes of butter cream.

Directions:
set oven to 180C fan assisted
1 x 9 inch round or square baking tin.
1 large bowl
1 wisk


cake
place all ingredients for cake mix into a bowl and beat together until mixed well ( mixture is quite stff and oily looking) place ionto baking tin and bake for around 45 to 50mins until a skewer spkied into middle of the cake comes out clean. Once cooked leave to cool.

frosting

make up by whisking equal quantities of butter cream and cream cheese together until thick and creamy. once cake is cold frost with the topping and enjoy.

keeps well in the fridge and freezes well.


Can be made as individual cakes by using muffin cases and bake for 20 mins or untill baked and frost as above. children alos enjoy this cake as it is not over spiced and does not contain nuts.
