Lemon Crisps Recipe

Ingredients:
1 pkg Duncan Hines Lemon cake mix
1/2 cup cooking oil
2 eggs
1 tsp grated lemon peel

Directions:
Preheat oven to 350. Combine all ingredients and mix weel. Drop from a teaspoon onto an ungreased cookie sheet. Bake at 350 for 10-12 minutes, until golden. Cool on cookie sheet for about 1 minute, then remove to racks to finish cooling.
Note:I like to dip a flat bottom glass in a mixture of sugar and lemon peel and flatten the cookies before baking. This makes them very crispy. I use about a 1/3cup of sugar and a tbsp of lemon peel.
Makes about 4 to 5 dozen cookies.
