Picante Chicken on Saffron Rice Recipe

  Mexican Chicken

Ingredients:
Pace mild Picante Sauce
Chicken breasts boned and skinned
Mrs. Dash lemon herb seasoning
Mahatma saffron rice mix

Directions:
Coat glass baking dish with Crisco oil. Spoon picante sauce on the bottom of the dish, covering bottom. Place chicken breasts on the sauce. Cover chicken with a thick layer of picante. Sprinkle generously with lemon herb seasoning. Cover with plastic wrap; cut a slit in the center of the plastic wrap. You may marinate all day, overnight or 5 minutes. Microwave on medium high power 4 to 5 minutes per chicken breast. Prepare rice mix while chicken is cooking. Once cooked place chicken on the barbecue, if desired, for flavor the sauce. Cover chicken with a thick layer of the plastic wrap. You may marinate all day, overnight or 5 minutes. Microwave on medium high power 4 to 5 minutes per chicken breast.
