No Bake Chocolate Mooncakes Recipe

Ingredients:

130 - 140 g hot water
70 g brown sugar
60 g melted chocolate
10 g cocoa powder
20 g shortening
60 g kou fen

Filling :
200 g lotus paste
70 g melted chocolate
50 g toasted melon seeds

Directions:
Mix all the filling ingredients together. Divide filling into 20 g per piece and roll each filling into a ball.
Mix hot water with sugar until the sugar is dissolved.
Add melted chocolate and cocoa powder into sugar mixture. Cool slightly.
Rub in shortening to kou fen till it resembles breadcrumbs. Add to chocolate mixture and blend well.
Rest dough for 20 - 30 mins. It can be chilled for easier handling.
Divide dough into 30 g each. Flatten each dough and wrap in filling.
Press into mould and knock out mooncake. Chill before serving.
This is a no- bake mooncake that requires a mooncake mold or something similar.
