Kale Soup Recipe

  Soup

Ingredients:
1lb. stew beef, cut in small pieces
1/2 lb. chourico or linguica diced (spicy sausage)
1 large onion
1 10oz. can beef broth or bullion cubes
2 cups water
3/4 head of cabbage, chopped (about 3 or 4 cups)
2 pkgs. frozen kale (or escarole or collard greens )
1 can red kidney beans.
5 cups of water
1/2 tsp. salt and pepper.
2 or 3 large potatoes

Directions:
Dust meat with flour and salt and pepper. Brown meat in a little oil in a stockpot, then
add onion and chourico. When onion is done, add broth and 2 cups of water. Simmer covered for 1 1/4 hrs.

Add vegetables and 5 cups of water with 1/2 tsp. salt and pepper. Simmer covered for 1 hr.

Finally dice 2 or 3 large potatoes and add to pot and simmer for about 15 minutes or just until potatoes are soft. Add more salt or pepper if needed.
