Zuppa Gallurese Recipe

  Italian Soup

Ingredients:
stale bread
Parmesan cheese
pecorino cheese
fontina cheese
parsley
black pepper
beef broth

Directions:
Several ingredients can be changed, but the base is always the stale bread and cheese which are arranged in a roasting pan, alternating a layer of bread with a layer of fresh grated cheese, parsley and bell pepper.

Method: In a roasting pan, make a first layer of thinly sliced stale bread, followed by a layer of shredded or grated parmiggiano mixed with crushed parsley and black pepper. Add a layer of bread, followed by pecorino. Add another layer of bread. Teaspoon by teaspoon pour boiling beef broth over the top until all the bread is wet. Sprinkle the top with fontina cheese. Bake in a very hot oven for about 10 minutes, until all the cheese is melted.
Zuppa Gallurese is a hearty peasant dish from the northern area of Sardegna around Gallura. It's not really a soup as we understand the word, though it does employ broth.
