CHOPPED GARLIC Recipe

What you want to do is buy some peeled garlic and throw it in a small food processor as needed. When chopped it will last at least a good week or so refrigerated; the cloves themselves at least a month. Stored in water they will loose their potency and in oil they go rancid; just cover well. At the wine club, we go through a gallon within 3-4 lunches and chop it fresh each one; it only takes a few seconds to chop and will always be at it’s best potency. Quite often when making a large sauce I break the cloves off the bulb and crush skins and all; no one will know the difference and it just adds more flavors.
