Standing Rib Roast
Directions:
Do not salt the meat as this thoughens it.Place roast in 450 degree oven for 15 minutes. You should hear it sizzle. Then turn down heat to 350 and roast UNCOVERED for 20 minutes a pound, plus 20 minutes. Remove from oven and cover lightly with foil to let it rest for 15 minutes before carving. Enjoy. I always use a meat thermometer in roasting meat.......rare would be 130; medium 150., well done 180. Standing Rib is customarily served with Yorkshire Pudding.
