Mom's Graham Cracker Pie Recipe | |

Ingredients:
16 squares graham crackers1 teaspoon flour 1/3 cup sugar 1 teaspoon cinnamon 1/3 cup melted butter 1/2 cup sugar 2 tablespoons cornstarch 3 egg yolks 2 cups milk 3/4 teaspoon vanilla 3 egg whites 6 tablespoons sugar 1/4 teaspoon cream of tartar
Directions:
Crush graham crackers very fine and mix with next 4 ingredients. Reserve 1/3 cup of crumb mixture. Rest of mixture is patted into 9-inch pie pan. Whip egg yolks in a large 6- to 8-cup bowl. Mix in 1/2 cup sugar, cornstarch, milk and vanilla. Cook in microwave 6 to 8 minutes, stirring every 2 minutes or until pudding coats spoon. Pour in pie shell. Beat egg whites, 6 tablespoons sugar and cream of tartar until stiff peaks form. Cover pie with meringue and sprinkle with 1/3 cup mix of crumbs. Bake at 400 until brown, about 8-10 minutes. |
