Having lived in Australia for many years this is my thought. Sydney has the highest % of Italian's outside of Italy. The 2nd highest % of ethnic background is Greek, with Greece being the largest pop. outside of Greece. Third is the Asian / Pacific Rim. All 3 cultures (inc. Thai & India) are part of Australians food culture starting around the late 1930's due to the unrest leading up to WWII. Any of the pasta dishes from these countries/cultures should be appropiate.
