Tortellini Spinach Soup Recipe | |

Ingredients:
2 cloves garlic1 tbsp. butter 2 cans beef or chicken broth 1 (8 oz.) package of fresh or frozen cheese tortelline 1 (10 oz) package of fresh or frozen (thawed) spinach. 1 16 oz. can stewed tomatoes (undrained and coarsly chopped).
Directions:
In a large saucepan, over medium-high heat, cook garlic in butter for 2-3 minutes. Add broth and tortellin. Heat to a boil; reduce heat. Simmer 10 minutes. Add spinach & tomatoes, simmer 5 minutes. Serve topped with parmesan cheese. Makes 6 servings.n/a
I got this recipe about 12 years ago. I don't remember where though. It is delicious and a big hit to roll in the fall season!
