Easy Honey and Fig Cake Recipe

Ingredients:
Makes 2 loaves

Figs are symbolic of the sweetness of life, and the fig tree is a symbol of prosperity and longevity. Here, figs are featured in a traditional Hanukkah bread.

6 eggs
1 cup honey
1 cup sugar
2 Tbs. oil
3 1/2 cups all-purpose flour
1 tsp. baking soda
11/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. allspice
1/2 tsp. cloves
1 cup finely chopped dried figs
1/2 cup finely chopped nuts

Directions:
Preheat oven to 300:F. Grease and flour two loaf pans.

In a large bowl, mix eggs, honey, sugar, and oil. Stir in flour, baking powder, baking soda, and spices. Fold in figs and nuts. Pour batter into prepared pans and bake 1 hour or until firm to the touch in the center. Unmold and cool on racks. Cool thoroughly before cutting into slices.
