Roasted Red Pepper Soup Recipe

  Soup

Ingredients:
5 red bell peppers (roasted, peeled, cored & seeded
1 TBS olive oil
1/2 Cup onions, diced
2 garlic cloves, minced
1/2 tsp cayenne pepper (or to taste)
3 cups chicken broth
salt & pepper
sour cream and cilantro garnish

Directions:
Heat olive oil in large pot to medium-high. Sautee onions & garlic until soft.
Add roasted pepper and onion mixture to food processor, adding small amount of broth. Process until smooth. Pour mixture into pot with rest of stock. Add the cayenne and salt and pepper. Simmer 10 minutes. May be served hot or cold.
Garnish with sour cream and cilantro.

Serves 4
