Espinaca Dip Recipe

  Dips

Ingredients:
- 10 oz package frozen, chopped spinach-thawed
- 10 oz can chopped tomatoes & chiles, drained
- 8 oz cream cheese, softened & cut into cubes
- 1 cup sliced, black olives
- 2 cups grated monterey jack cheese
- 1 tbsp red wine vinegar
- 2 tbsp cornstarch
- 1 cup half & half

Directions:
1 - Combine spinach, tomatoes & chiles, cream cheese, olives, cheese, & vinegar in bowl. In separate bowl, mix cornstarch with half & half until blended thoroughly.
2 - Combine the two mixtures until well blended. Pour into a greased, shallow baking dish. Bake at 400 degrees for 30 minutes. Serve hot with chips.
Great with tortilla chips.
