Green Chile sauce Recipe

  Mexican Sauces

Ingredients:
1 cup onion, chopped
3 cloves garlic, minced
3 Tbs. oil
1/2 tsp. ground cumin
12 New Mexican green chiles, roasted , peeled, & chopped.
1 3/4 cups water

Directions:
Saute onion and garlic in the oil until soft. Stir in the remaining ingredients, bring to a boil, and reduce to a simmer. Cook 30 minutes.

Makes 3 cups
VARIATION Add 2 medium tomatoes, chopped.

You can even use this sauce to make green chile cheese enchaladas.
Canned green chilies will not give the flavor of the fresh chilies. Frozen chilies are almost as good as fresh. Definitely better than can.
