Mini Cheesecakes Recipe

Ingredients:
12 sugar free vanilla wafers
2 8-oz pkgs. cream cheese - softened
1/2 cup Splenda
1 tsp. vanilla
2 eggs
cupcake liners

Directions:
Preheat oven to 325
Line muffin tins with cupcake liners.
Place a wafer in each.
With mixer, blend cream cheese, vanilla and splenda on medium speed.
Add the eggs and mix well.
Pour over wafers and fill cups 3/4 full.
Bake 20-25 minutes.
Cool in pan; then remove and chill.
Makes 12.
