Ingredients:
3 tablespoons best-quality olive oil6 LARGE garlic cloves, chopped 28-ounce (796-ml)can tomates, undrained 12 Greek olives (Kalamata)pitted and chopped 2 tablespoons capers, drained 1/2 teaspoon hot red pepper flakes 1/2 cup finely chopped fresh parsley, plus 2 tablespoons for garnish Grated Parmesan cheese
Directions:
1) Heat oil in medium, heavy, noncorrosive skillet.2) Add garlic and cook for 2 minutes. 3) Add tomatoes and liquid and cook for 30 minutes, or until sauce thickens slightly. 4) JUST BEFORE pasta is ready, add remaining ingredients, then toss with hot pasta in a serving bowl. 5) Garnish with parsley and serve immediately. 6) Pass extra grated cheese and the pepper mill for each person to add to taste. Serves 4 Recommended Pasta: 1/2 poind penne or rigatoni Legend has it that this lusty sauce was created by Neapolitan ladies of the night. Translated, puttanesca means "of harlot or whore." There are two stories: the ladies either cooked this quick and tasty sauce between clients or they prepared it to entice passersby with the tantalizing aroma!
