MAPLE BAKED APPLES WITH CUSTARD SAUCE Recipe

  American Dessert

Ingredients:
FOR THE CUSTARD SAUCE:

2 egg yolks
3 tablespoons sugar
1 cup scalded milk
1/2 teaspoon grated lemon rind
1/4 teaspoon vanilla

FOR THE APPLES:

4 baking apples
1/4 cup chopped pecans
1/4 cup raisins
1/4 teaspoon cinnamon
1 cup maple syrup

Directions:
To make sauce, in the top of a double boiler, whisk together egg yolks and sugar. Over hot (not boiling) water, gradually whisk in milk. Cook, stirring constantly, until mixture thickens and coats the back of a metal spoon. Remove from heat and water; stir in lemon rind and vanilla. Cool, stirring often.

Core apples, starting from stem end, leaving bottoms intact. Peel each apple (from the stem end) two-thirds of the way down. Arrange apples in a shallow baking pan into which they fit slightly apart. Stir together pecans, raisins and cinnamon; spoon into core cavities of apples. Pour male syrup over apples.

Bake in 350-degree oven, basting occasionally with the syrup, until tender--about 45 minutes.
SERVING SUGGESTION: I spoon a pool of custard sauce onto individual dessert plates, place an apple in each pool, and drizzle the tops with the custard sauce.
