Pumpkin Drop Cookies Recipe

Ingredients:
Makes 36 cookies

1 1/4 cups dark brown sugar
1/2 cup butter
2 eggs, beaten
1 1/2 cups cooked pumpkins
1/2 teaspoon salt
1/4 teaspoon ginger
1/2 teaspoon nutmegs
1/2 teaspoon cinnamon
2 1/2 cups flour
4 teaspoons baking powder
1 teaspoon lemon extract
1 cup raisins
1 cup chopped nuts

Directions:
1. Preheat oven to 400 degrees F.
2. Cream butter and sugar together in a large mixing bowl.
3. Add eggs, pumpkin, spices, and salt.
4. Sift together flour and baking powder in another bowl or on waxed paper.
5. Stir flour into creamed mixture; add lemon extract, raisins, and nuts, mixing well.
6. Drop by spoonfuls onto a greased cookie sheet.
7. Bake in preheated oven for 12-16 minutes.
