Bechamel Sauce - Greek Recipe

Ingredients:
2 oz butter
2-3 oz flour
1 1/2 pints full milk
salt & peper to taste
hearty pinch of nutmeg

Directions:
Scals the milk. Heat the butter in a saucepan and gradually work in the flour until smooth. Slowly add the milk, stirring it all the while, add nutmeg, salt and pepper and cook very slowly until the sauce is thick and there is no odour of flour. It is better to cook for 15 to 20 minutes, stirring all the while.
