British Bannock Recipe

  British Bread

Ingredients:
1/2 cup all-purpose flour
1/2 cup rolled oats(breakfast oatmeal, either quick or regular)
1 teaspoon baking powder
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
2 eggs, 1 cup milk
1/2 cup dried currants, raisins, chopped nuts, or diced fruit(optional)

Directions:
1.Combine dry ingredients, and mix well in a bowl.

2. Combine eggs and milk, and beat until frothy; then add to the dry ingredients. Add fruit or nuts, if desired, and mix well.

3. Spoon about 2 tablespoons batter onto a lightly greased hot pan. When many bubbles appear on top, turn over, and cook on other side until done through the center.Makes about 12(3-inch) bannocks
