Vegetarian Chili Recipe


2-3 tbsp. butter
1/4 head chopped red cabbage
1 large onion
1/4 c. celery
7 cups chopped veggies (carrots, zucchini, broccoli, peas, green beans are all good)
1 lb. 10 oz. tomato puree
1 lb. 10 oz. kidney beans
1 lb. 10 oz. frozen corn
2 tsps. garlic powder
salt, pepper and chili powder to taste

Mix all together and cook on medium low until veggies are tender
Makes 1 gallon
Easy, great taste, freezes well.
