Catfish Jambalaya Recipe | |

Ingredients:
2 cups chopped onion1/2 cup chopped celery 1/2 cup chopped green pepper 2 garlic cloves, minced 1/4 cup butter or margarine 1 can (10 oz.) diced tomatoes and green chilies, undrained 1 cup sliced fresh mushrooms 1/4 tsp. cayenne pepper 1/2 tsp. salt 1 lb. catfish fillets, cubed Hot cooked rice Sliced green onions
Directions:
In a saucepan over medium-high heat, saute' onion, celery, green pepper, and garlic in butter until tender, about ten minutes. Add tomatoes, mushrooms, cayenne, and salt. Bring to a boil. Add catfish. Reduce heat; cover and simmer until the fish flakes easily with a fork, about ten minutes. Serve over hot cooked rice and top with green onions. |
