Warm Soft Chocolate Cake Recipe | |

Ingredients:
Unsalted butter for greasing1/2 c. (1 stick) unsalted butter, cut into pieces 4 oz. good quality bittersweet chocolate, broken up (preferably Valrhona or Scharffen Berger) 2 large whole eggs 2 egg yolks 1/4 c. sugar 2 tsp. flour Confectioners' sugar
Directions:
Preheat oven to 450 degrees F. Butter and lightlyflour four 4-ounce molds, custard cups or ramekins. Tap out excess flour. Place on jelly roll pan or sided cookie sheet. Heat butter and chocolate in medium saucepan over LOW heat, stirring occasionally until melted and smooth.* In small bowl, beat together the eggs, egg yolks and granulated sugar with a wisk or electric mixer (on med-hi speed) 3 mins. or until light and thick. On low speed (or by hand) beat in the 2 teaspoons of flour, then the warm chocolate mixture, just until well combined. If desired, transfer to a 2-cup glass measure for easy pouring. Divide the batter among the prepared molds. (At this point, you can refrigerate the desserts until you are ready to eat, up to several hours. Bring them to room temperature before baking.) Bake 7 minutes until sides are set. Centers will be quite soft. Using oven mitts, immediately invert onto individual serving plates. Let stand one minute** and carefully remove mold. Dust lightly with confectioner's sugar. Serve immediately! *You can use a double boiler over simmering water if you prefer for melting the chocolate/butter mixture. **I find this step to be unnecessary.
The cakes always fall right out with NO problem
whatsoever. Just be very careful, as the little
molds (I just use the little pyrex ones) are quite
hot. This is truly one of the most delicious and
decadent desserts - as well as one of the simplest
to prepare. I usually have them ready to pop into
the oven while clearing the dinner/main course dishes and starting the coffee. They are ready in
no time, so be ready to serve them when they come
out. I like to place a dollop of freshly whipped
cream with a couple raspberries or a strawberry on
the side. It's one of my son's annual requests for his birthday every year. We all look forward
