Seafood Au Gratin Recipe

Ingredients:
2 c. finely chopped celery
2 c. finely chopped onion
2 sticks butter or margarine
1 c. all-purpose flour
2 c. evaporated milk
4 egg yolks
1/2 tsp. salt
1/2 tsp. red pepper
1/2 tsp. black pepper
2 (6 oz. each) cans water chestnuts
1 lb. cooked shrimp
1 lb. white crabmeat
1 lb. grated Cheddar cheese
1/2 c. dry wine

Directions:
In a large saucepan, saute' onions and celery in butter; blend flour in well. Add milk and stir. Add egg yolks, stirring constantly. Stir in salt and pepper. Cook about 5 minutes. Blend in shrimp and crabmeat. Pour mixture into casserole dish and sprinkle with grated cheese. Bake for 10-15 minutes at 375 degrees. Serves 12.
