PANE CALDO BISTROT CHECCA APPETIZER Recipe

  Italian Appetizer

Ingredients:
1 LB. RIPE TOMATOES, FINELY DICED
3 FRESH BASIL LEAVES, CHOPPED
1/4 CUP EXTRA-VIRGIN OLIVE OIL
2 CLOVES GARLIC, SLICED
SALT, PEPPER
24 (2-INCH DIAMETER) SLICES FRENCH BAQUETTE OR ITALIAN BREAD, TOASTED

Directions:
COMBINE TOMATOES AND BASIL IN BOWL. TOSS LIGHTLY. ADD OLIVE OIL AND GARLIC. SEASON TO TASTE WITH SALT AND PEPPER. TOSS JUST UNTIL TOMATOES ARE EVENLY COATED WITH OIL. COVER AND SET ASIDE 7 TO 10 MINUTES. SERVE OVER TOAST SLICES. MAKES ABOUT 2 CUPS FILLING OR 24 APPETIZERS/
